TERRES DE MOLINES MERLOT

TERROIRS : Clay and limestone.

VARIETALS : 100% merlot.

VINIFICATION :
- Yield limitation through spring pruning and « green harvest ».
- Selected leaf removal to improve grape ripeness and health.
- Late harvest to promote skin and aromatic ripeness.
- 100% destemming with sorting.
- Cold pre-fermentation maceration to maximize aromas and color.
- Temperature controlled fermentation ( 25°C) with limited extraction.
- Maceration under hot skin cap (30°C) for 4 days in order to round off the tannins.
- Aging with micro-oxygenation to refine the tannins.

TASTING NOTES
:
- Appearance : Dark and brilliant red.
- Nose : Very generous and complex with aromas of black cherry and underwood.
- Taste : Tender and fruity it finishes with velvety tannins.

AGING POTENTIAL : Enjoy now or cellar up to 3 years.


FOOD & WINE PAIRING : Serve at 65°F (18°C).
