VINIFICATION :
- Harvested at peak maturity.
- Skin contact for about 12 to 24 hours to extract colour and aromas.
- 60% is bled, 40% is directly pressed.
- Juice is cooled to 12°C for rapid racking of the must.
- Temperature controlled fermentation at 14°C to 16°C during 21 days.
- Aging on fine lees with agitation during 8 weeks.
- Blending, filtration and bottling.
TASTING NOTES :
- Appearance : Rose petal with beautiful violet highlights.
- Nose : Striking aromas of fresh red fruits (strawberry, cassis, red currant).
- Taste : Ample and rich, this wine is impressive for its full body and its crisp, lingering finish.
