Yield limitation through spring pruning and “green harvest”.

Manual leaf removal to improve grape ripeness and health.

Manual harvest at peak maturity with refrigeration of grapes.

Skin contact for 12 hours at cold temperature.

Gentle extraction through pneumatic pressing.

Sedimentation to 12°C for a rapid “débourbage”.

Fermentation in stainless steel vats at 14°C.

Aging on lees with “batonnage” for 5 months.

A single bottling run in February.
