« I am absolutely convinced of the potential of the Pilier terroir to produce a great Syrah that marries the opulence of a New World Syrah with the mineral elegance of a northern Rhone Syrah.  In this spirit, I search to craft a very soft wine with the complexity and the  rather savage power of this beautiful varietal.

Old vines, small yields, late harvest, permit me to craft a textured, silky wine with minimal intervention in the winery.  The barrel-aging just polishes and reveals the beauty of this unhewn diamond! »

Les Piliers Syrah 2004

Vin de Pays du Gard

Terroir: Rolled pebbles and red clay

Varietals :  100 % Syrah

Vinification :

  • Yield limitation through spring pruning and “green harvest”. 
  • Actual yield: 2 tons per acre
  • Selected leaf removal to improve grape ripeness and health.
  • Late harvest in “sur-maturité” to promote skin and aromatic ripeness.
  • 100% destemming.
  • Pre-fermentation maceration (5 days) to maximize primary fruit.
  • Temperature controlled (26°C) fermentation.
  • Warm (28°C) post-fermentation maceration (2 weeks) without “remontage” to optimize extraction and round off tannins.
  • Aging in French oak barrels for 12 months.

Dégustation :

  • Appearance : A dark ruby almost black color.
  • Nose : Elegant and intense, this alluring nose is rich in dark berries, licorice, violet and black current with garrigue spices. 
  • Taste : Rich and dense, the complexity of the aromas play out progressively.  The tannins are superbly ripe and delicate.
