I want to express the seductiveness and elegance of this superb Bordeaux varietal to create a delectable wine.  Extremely ripened grapes are required to produce the luscious texture so characteristic of great merlots.

Terres de Molines Merlot 2006

Vin de Pays d'Oc

 

Terroir : Clay and  limestone

 

Cépage : 100% Merlot

 

Vinification :

  • Yield limitation through spring pruning and « green harvest ».
  •  Selected leaf removal to improve grape ripeness and health.
  • Late harvest to promote skin and aromatic ripeness.
  • 100% destemming.
  • Cold pre-fermentation maceration to maximize aromas and colour.
  • Temperature controlled fermentation ( 25°C) with limited extraction.
  • Maceration under hot skin cap (30°C) for 4 days in order to round off the tannins.
  • Aging with micro-oxygenation to refine the tannins.

Tasting Notes :

  • Appearance : Dark and brilliant red.
  • Nose :   Very generous and complex with aromas of black cherry and underwood.
  • Taste : Tender and fruity it finishes with velvety tannins.
