Cépage : 85% Sauvignon, 15% Viognier
Vinification :
- Yield limitation through spring pruning and « green harvest ».
- Selected leaf removal to improve grape ripeness and health.
- Harvest at peak maturity with 100% destemming.
- Cold skin contact for 12 hours to maximize primary fruit.
- Partial racking of the must.
- Fermentation in vats and aging on fine lees with agitation through Christmas.
- Light fining, blending, filtration and bottling in March.
Tasting Notes :
- Appearance : Yellow with green glints.
- Nose : Very aromatic, predominantly aromas of citrus, violet and boxwood.
- Taste : Rich and full with a soft opening and a fruity finish heightened by a pleasant acidity.
