Vin de Pays d'Oc

Terroir : Clay and limestone

Cépage : 85% Sauvignon, 15% Viognier

Vinification :

  • Yield limitation through spring pruning and « green harvest ».
  • Selected leaf removal to improve grape ripeness and health.
  • Harvest at peak maturity with 100% destemming.
  • Cold skin contact for 12 hours to maximize primary fruit.
  • Partial racking of the must.
  • Fermentation in vats and aging on fine lees with agitation through Christmas.
  • Light fining, blending, filtration and bottling in March.

Tasting Notes :

  • Appearance : Yellow with green glints.
  • Nose : Very aromatic, predominantly  aromas of citrus, violet and boxwood.
  • Taste : Rich and full with a soft opening and a fruity finish heightened by a pleasant acidity.
